Food 101 - Igado
When I think of my mom’s favorite viand for hot rice,
It will be ‘Igado’. We’re a family from the province Laoag City in Ilocos and
one of their pride dishes is ‘Igado’. This is my first food entry here and I’m
so excited to put it in writing.
It’s quite simple. The ingredients are (1/2 kilo
thinly-sliced pork cut into strips, 200gms of pork liver cut into strips, 2
tablespoons + 1 tablespoon finely minced garlic, 3/4cup chopped onions, ¼ cup
soy sauce, 1 tablespoon vinegar, 1 teaspoon ground black pepper, 2pcs bay leaf
or laurel, 1 green and red bell pepper, 1 can green peas, 1teaspoon Lea &
Perrins, Oil and 1 Knorr Chicken Cubes.
Marinade: Using a Bowl, just mix the soy sauce, vinegar,
garlic and ground black pepper then add the pork and liver and marinate for
1hour.
Cooking: Sauté the garlic and onions then add the marinated
meat. Add the laurel and mix together. Add the Knorr Chicken cube and mix
together. Simmer slowly until meat is tender. Check from time to time to avoid
overcooking the meat. Then, add the green peas and bell peppers and mix again
until cook. You can adjust the taste and my ‘Igado’ is ready to serve for my Mom.
